This may be an obvious recipe for some of you, but man is it delicious. I’ve made this for the past couple of mornings and it really is the best way to start your day. So simple, and doesn’t require really any cooking knowledge (win/win for me!).
2 slices of whole wheat toast
1/2 an avacado
Fry the two eggs in a pan. A little drop of olive oil can go a long way with helping to fry eggs.
Next I put the bread in the toaster, until it is just lightly brown.
Once the toast is done I scrap half the avacado clean, using a fork. Split the contents of the avacado between the two pieces of toast (about 1/4 of an avacado on each piece). Store the remaining half of the avacado in the fridge for tomorrow’s breakfast!
Once eggs are done frying, place one egg on each piece of toast, and ENJOY!
I sprinkled some pepper flakes on top of mine when I took this picture for a little extra kick.
